Nestled on the volcanic slopes of Acatenango, Guatemala, Finca La Senda is a specialty coffee farm shaped by high altitude, rich volcanic soils, and the cool mountain climate that defines this renowned coffee growing region. Surrounded by forests and influenced by the nearby volcanic chain, the farm focuses on careful cultivation, selective harvesting, and controlled post-harvest processing to highlight the unique character of Guatemalan terroir.

At elevations ideal for slow cherry maturation, the coffees from Finca La Senda develop exceptional sweetness, structure, and complexity. The farm combines traditional coffee growing knowledge with modern fermentation techniques to produce expressive lots with clarity, balance, and distinctive flavour profiles.

Pache Natural_Champagne Yeast

This lot is produced from the traditional Pache variety, a natural mutation of Typica known in Guatemala for its sweetness, elegance, and refined cup profile. Carefully hand harvested at peak ripeness, the cherries undergo a controlled natural fermentation using Champagne yeast, enhancing aromatic complexity and fruit-driven character while maintaining balance and cleanliness in the cup.

The extended natural drying process allows the sugars from the coffee cherry to fully interact with the bean, creating a rich and layered sensory profile. The Champagne yeast fermentation contributes vibrant fruit notes, floral aromatics, and a silky mouthfeel, resulting in a coffee that is expressive yet refined.
