Produced in  Santa Rosa de Cabal at Finca La Holandesa, this Yellow Honey micro lot combines Castillo and Bourbon varieties with a carefully prolonged honey fermentation and slow sun drying process. Roasted light to medium, the coffee delivers notes of orange, jasmine, and honey sweetness with a smooth, balanced cup profile. This award-winning coffee was recognised as the Global Coffee Awards National Winner for the Netherlands 2025 and was also a finalist in the Honey Filter Processes category.

Finca La Holandesa_Yellow Honey

Produced in our farm in Santa Rosa de Cabal, this Yellow Honey micro lot  reflects the rich biodiversity, cool mountain climate, and traditional coffee heritage of the Colombian Andes. Carefully cultivated at 1950 m.a.s.l in Vereda El Manzanillo, this specialty coffee is handcrafted by Dany and Luz Nidia who are dedicated to quality, sustainability, and the preservation of ancestral coffee knowledge.

Each cherry is selectively harvested and classified bean by bean according to maturity and quality before undergoing a carefully controlled prolonged honey fermentation. The coffee is then slowly sun-dried, allowing the interaction between the fruit mucilage, mountain climate, and solar heat to enhance sweetness, complexity, and aromatic character.

This award winning lot was recognised as the Global Coffee Awards National Winner for the Netherlands 2025 and was also a Finalist in the Honey Filter Processes category, highlighting the unique identity and craftsmanship behind the coffee.

Processing

Using both ancestral and modern post harvest techniques, the coffee is dried naturally under the Colombian mountain sun until reaching an ideal humidity between 10% and 11%. The final light-medium roast preserves the sweetness, floral complexity, and vibrant characteristics developed during fermentation and drying.
